Chef’s recipe - Auberge de la Bouzaize

Tartar with two salmon and
her fresh herb coulis

For 4 people :

  • 300 gr of raw salmon
  • 4 slices of smoked salmon
  • 1 shallot
  • 50 gr of chives
  • 1 lemon juice
  • 2 spoons of mayonnaise
  • Salt pepper
  • ½ liter of liquid cream
  • Fresh herbs: parsley, chives, dill.

Dice the raw salmon, chop the chives and shallot. Mix everything, add mayonnaise, lemon juice, salt and pepper. Book in the fridge.

Boil the cream with the fresh herbs, salt and pepper. Infuse for 20 minutes, then mix and let cool.

Place on a plate the coulis, put the raw salmon in the middle of the slice of smoked salmon and make a chaplain. Decorate with some fresh herbs.
